How to start a benefit Rodeo?

So after doing a benefit trail ride for the last 6 years, I want to start a local rodeo. I should have an arena with an old restaurant where we can sell food. I might have a colt to raffle off. But I want to know what else needs to go into it. I need to find someone to donate the food. But someone mentioned doing taxes on it? So if anyone has any experience with this I'd love the help.
