What benfits do aquatic plants have? ?

I've recently invested 150$ into plants for my 55 gallon freshwater tropical tank. They have made the white gravel quite dirty but are growing well. Will the plants feed on some of that decaying matter on the gravel? What other benfits do they have for my tank?
